Recipe: Cumin Chicken Kebabs

It’ll be a rough day for our poor little dog today – he has to have two teeth extracted 🙁
I get nervous when he has to be put under and the waiting game is no fun so to distract myself I thought I’d share a recipe: cumin chicken kebabs. The marinade is easy to make and the chicken comes out super flavorful and tender. It pairs well with whole wheat couscous for a Middle Eastern flavored meal.
3/4 cup plain non-fat yogurt
2 garlic cloves, minced
1 tbsp fresh peeled minced ginger
1 tbsp ground cumin
2 tsp paprika
1 tsp tumeric
1/2 tsp salt
1/8 – 1/4 tsp cayenne
1 lb chicken breast
2 large bell peppers (any colors)
1. To make marinade, add first eight ingredients to a large ziploc bag. Cut chicken into 1″ cubes and add to bag. Mix well. Refrigerate and allow to marinate at least 30 minutes or up to 24 hours.
2. Preheat broiler. Remove chicken from marinade and cut up vegetables into 1″ pieces. Thread chicken and vegetables in alternating fashion onto skewers.
3. Spray broiler pan with non-stick cooking spray and place skewers on pan. Spray tops of skewers with non-stick spray.
4. Broil 5″ from heat for about 12 minutes or until chicken is cooked through. Turn kebabs half-way through to cook evenly.
Serves 4. You can easily double the recipe to make it for more!
